Crustless Quiche
Very easy to make and bake.

- 5 Eggs
- ⅓ cup Onions Diced
- 2 Tomatoes One for the base and one for topping
- ½ tsp Chili Flakes
- 1 tsp Garlic chushed
- ⅓ cup Basil (chopped and packed)
- 3 oz Shredded Cheese of your choice
- ½ cup Milk I use 2%
- Salt and Pepper to taste
Preheat oven to 350℉
Beat the eggs in a large bowl
Chop all the ingredients. One tomato should be deseeded and chopped. The seeds you can chop and added to the beaten eggs
In a sauce pan, sauté the onions, garlic and chili flakes. Add salt and pepper to taste
Remove the pan from the stove. Stir in the tomatoes and basil
In a greased baking dish, layer the onion mixture at the bottom
In the beaten eggs, add the cheese, tomato seeds, milk, salt and pepper to taste. Mix well.
Carefully pour the egg mixture into the dish
Top with a sliced tomatoes
Bake for 50 minutes
Remove from oven and let it rest for 10 minutes before serving
