Punjabi Rajma Instant Pot (Red Kidney Bean Curry)

Ingredients
- 1 cup Red Kidney Beans
- 2 tbsp Vegetable Oil
- 1 tsp Cumin Seeds
- 1 Jalapeno Pepper Diced
- 1½ cup Onion Diced
- 1 cup Tomato Diced
- 1½ cup Water
Spices
- ½ tsp Turmeric
- 1 tsp Cumin Powder
- 1 tsp Coriander Powder
- ½ tsp Garam Masala (all spice)
- ½ tsp Kashmiri Chili Powder
- ½ tsp Salt
Instructions
- Soak the beans for 4+ hours

- Dice the onions, jalapeno peppers and tomatoes

- Turn on the instant pot to sauté normal and add the oil. Once hot add cumin seeds and jalapeno peppers. Sauté for 30 seconds

- Add onions. Sauté for 2 mins

- Add ginger and garlic paste. Sauté for 1 min

- Add tomato and spices. Sauté for 1 min

- Add the water and the drained beans

- Set the Instant Pot to beans. It will set to 30 mins. Let the pressure release naturally
- Remove from the pot and garnish with cilantro
