Ginger Chicken


Ginger Chicken
If you like ginger you will love this spicy ginger chicken!
Ingredients
- 1.5 lb Boneless cubed chicken thigh or breast
- 2 tbsp Cooking Oil
- 2 cups Diced Tomatoes (about 3 to 4)
- 1.5 cups Diced Onions (1 large)
- 2 tbsp Ginger Paste
- 1 tbsp Crushed Garlic
- 1 Jalapeno Pepper diced
- 2 inch Ginger Julienned
- 1 tsp Kashmiri Chili Powder
- 1 tsp Ground Black Pepper
- 1/2 tsp Salt adjust to taste
- 1/2 tsp Turmeric
- 1 tsp Coriander Powder
- 1/2 tsp Garam Masala
- 1 tsp Soy Sauce
- 1/2 cup Greek Yogurt whipped at room temperature
Garnish
- 1/2 Jalapeno Pepper Julienned
- 1 inch Ginger Julienned
- Cilantro
Instructions
- Cut all the ingredients

- Heat oil in a pot and fry the onions on high for 5 mins

- Add the ginger and garlic.

- Continue to fry for 2 mins

- Add in all the chicken and fry on medium high for 10 mins

- Add all the spices and soy sauce

- Cook for a few mins

- Add in the tomatoes

- Cook for about 10 mins on medium until the tomatoes are mushy

- Add in the julienned jalapenos and ginger

- Cook for 5 minutes

- Add in the whipped yogurt. Stir while adding.
- Simmer covered for 5 mins

- Garnish with cilantro and ginger
