Lauki Dal – Opo Squash with Lentils – Instant Pot

- Instant Pot Pressure Cooker
Ingredients
- 2 lb Lauki (Opo Squash)
- 2 Roma Tomatoes
- ½ Onion
- ½ cup Channa Dal
- 1 tbsp Cooking Oil
- ¼ tsp Mustard Seeds
- ¼ tsp Asafoetida optional
- 1 tbsp Garlic Paste
- ½ tsp Salt
- ½ tsp Turmeric
- 1 tsp Cumin Powder
- 1 tsp Brown Sugar
- 1 tsp Kashmiri Chili Powder
- ½ cup Water
Instructions
- Measure the spices

- Chop the lauki, tomatoes and onions

- Soak the dal in a cup

- Turn on the instant pot to saute medium. After it warms up add in the oil
- Add the mustard seeds and asafoetida. The seeds will sputter
- Add in the onions and garlic. Cook for a few mins

- Add in the tomatoes and all the spices

- Cook for 3 minutes

- Rinse the dal and add to the pot. Add in the lauki and 1/2 cup water

- Mix everything in the pot

- Set the instant pot to pressure cook for 15 minutes. Let the pressure release naturally
- Lauki Dal is ready. Check the consistency and see if you like it more dry (saute on low) or wet (add little bit of water)

- Ready to serve
